I am not a fan of pimento cheese. I know, I know….it’s a southern delicacy. I love cheese and all the other ingredients that go into pimento cheese, but not all together in one place. When I don’t like a certain kind of food, I always try to find a way to make myself like it by giving it a new venue. I have had success with this method with cooked spinach, brussel sprouts and green olives. I can’t eat them by themselves, but when paired with something I find delicious, I can sort of like it. The only food that I have not been successful with using this method is blue cheese. Blue cheese and I are not friends and we have completely broken up, never to speak to one another again.
Pimento Cheese and I are working on our relationship, and I think we have had a breakthrough with these stuffed jalapenos! It may have helped that I found some Jalapeno Pimento Cheese at Costco which inspired me to create these stuffed peppers.
The icing on the cake was to wrap these little fellers in bacon. Not only will the bacon hold in the pimento cheese, but it will also make it taste good. It’s bacon! What’s not to like?
Ingredients
10 jalapenos, sliced and seeded
1 container prepared pimento cheese
20 slices or more bacon
Instructions
This recipe is so easy, it’s almost embarrassing! The hardest thing to do is putting on the latex gloves you need to wear when handling jalapenos. One touch of the eye is a hard lesson to learn if you do not wear rubber gloves while seeding jalapenos. Trust me on that one!
Take the jalapenos that you sliced lengthwise and deseeded. You can leave the seeds in if you want more heat, but if you take out the seeds and veins, you will have more room for the filling.
Fill the cavity of the jalapenos with pimento cheese. I used the Costco Jalapeno flavored pimento cheese. I give it two thumbs up!
Wrap the jalapenos in bacon, completely covering them with the bacon. You may need more than one piece, depending on the size of the jalapeno. Some of the pimento cheese will seep out no matter what you do, but the bacon will minimize the seepage.
Bake in a 375 degree oven for 20 minutes or until bacon looks done.
Some of these are wrapped with regular bacon and some of these are wrapped with turkey bacon. This just goes to show that you can alter recipes to make delicious food according to the tastes of your household. These are delicious no matter what kind of bacon you use, and I can safely say that me and pimento cheese can still be friends!
