Ever wondered how the Sloppy Joe got its name? The “sloppy” part is obvious, but the “Joe” comes from the cook who dreamed it up in a little café in Sioux City, Iowa. It’s as simple as that!

My Sloppy Taco Joes give that classic sandwich a zesty south-of-the-border makeover. Think seasoned ground beef, smoky spices, and a hint of taco flair piled high on a bun (or a low-carb roll if you like). It’s messy, flavorful, and an irresistible twist on the beloved American original.

Ingredients

1 lb. ground beef

1 onion, chopped

2 Tbsp. taco seasoning

1 can condensed tomato soup

1 cup salsa

1/2 cup cheddar cheese, shredded

Hamburger buns

Instructions

Brown the ground beef and chopped onion until no longer pink. Drain.

Stir in the tomato soup, salsa and taco seasoning.

Serve on a hamburger bun. I used Keto hamburger buns from Aldi to Keto-ize it, but you can use any type of bun you like. To serve, top the ground beef with shredded cheese. You can’t get any easier than that! You can make this ahead for a quick take-along work lunch, or you can make a big batch of it and store it in the freezer for an easy meal to throw together when time is tight in the evening. Of course, it is also great to make something fresh for lunch or dinner with minimal effort.
