Isn’t it nice sometimes to have something all to yourself? Take these Miniature Meatloaves for instance. Everyone at the table gets their own. I bake these in aluminum mini loaf pans. The smaller size cooks much faster than a larger meatloaf. Kids think this mini size is much more fun than the regular ‘ole big size meatloaf, plus you can portion a smaller meatloaf much easier for the kids than a large one.
Ingredients
1 Tbsp. extra virgin olive oil
1 yellow onion, chopped
2 tsp. dried thyme
4 tsp. salt
2 tsp. pepper
3 Tbsp. Worcestershire
1/3 cup chicken or beef broth
1 Tbsp. tomato paste
2-1/2 lbs. ground beef
1/2 cup breadcrumbs
2 eggs
1/2 cup sugar free ketchup
1/3 cup milk
1 tsp. garlic
1/4 cup Swerve brown sugar
Instructions
In a large mixing bowl, combine all the ingredients and mix well.
Heat the oven to 350 degrees. Scoop the meat mixture into miniature aluminum loaf pans.
Place the loaf pans on a baking sheet and bake for 30-40 minutes. These smaller meatloaves cook more quickly than a full-size loaf. You can use a meat thermometer to gauge when the loaves are done.
Remove from the oven and allow to rest a few minutes before serving. Everyone at the table can get their own meatloaf, or you can slice and divide them.
