Stuffed Peppers was my Dad’s favorite! My mother would stuff it with leftover meatloaf and top it with a flavored tomato sauce. So simple, yet so delicious. In this recipe, I use a few additional ingredients to keep it Keto and to kick up my mother’s stuffed peppers a notch or two.
Ingredients
6 peppers, tops cut off and deveined
Leftover meatloaf (or see below if you do not have any leftover meatloaf)
OR
Pre-made meatloaf from the grocery store
OR
1 pound ground beef
1 onion, chopped fine
1 egg
1 cup almond flour or oats
1 8 oz can tomato sauce
Salt and pepper to taste
1 8-ounce tomato sauce
Mozzarella cheese for topping the peppers
Instructions
Heat the oven to 375 degrees. Prepare the peppers.
Stuff the peppers with the leftover meatloaf. If you do not have any leftover meatloaf, mix together the ingredients listed above as an alternative or a pre-made meatloaf from the grocery store. On this day, I made enough meatloaf from scratch to have three meals. I wanted enough leftovers to have leftover meat loaf sandwiches and for stuffed peppers.
Top with tomato sauce and a sprinkling of your favorite cheese. Cover with foil and bake in the oven for 30 minutes. If you are using the alternative version of the meat mixture, the peppers will need to bake for an additional 15 minutes or so because the mixture was raw when placed in the peppers.
Remove the peppers from the oven and bake for an additional 15 minutes until the cheese is slightly browned.
