My idea of breakfast is a lingering cup of coffee in the morning; however, living a Keto lifestyle, I realize I need to get into better habits. Breakfast is one of those habits. I don’t like to say that Keto is a diet, even though it is. I would rather say that it is a lifestyle choice. With any lifestyle choice, I must include breakfast in my day. This was a hard habit to break because I have not eaten a regular breakfast since I was in middle school. Making something quick and easy or ahead of time is one way that has helped me to start eating breakfast regularly. I don’t have to eat a lot, and the side benefit is that my family doesn’t have to fend for themselves or skip breakfast altogether. This ham strata fits into my requirements and feeds my family at the same time.
Ingredients
8 slices loaf bread (I used Keto bread, but any bread works)
8 slices cheese (I used provolone, but any cheese will do)
4 slices black forest ham or other ham, chopped
1 cup milk
2 eggs
salt and pepper
Instructions
In an 8×8 square pan sprayed with cooking spray, line the pan with the bread slices by placing 4 slices on the bottom. Slice the remaining bread slices in half and place them along the sides of the dish. Similarly, place the cheese on the bread, cutting the slices in half for the sides. Spread the chopped ham pieces over the bottom of the dish.
In a medium bowl, whisk together the milk, eggs, salt, and pepper. Pour the mixture over the ham.
Bake at 375 degrees for 45 minutes until puffy and toasty.
