Wait for it….Wait for it…..Wait for that subtle and spicy zing that finishes these delicious chocolate cookies. These cookies are as soft as pillows and are a little outside of the realm of other chocolate cookies. These cookies need no additional embellishment as they are special all by themselves.
I must add that these are not Keto at all. I made these for a special occasion, but I think I can make a Keto version someday. That is something to look forward to!
Ingredients
3/4 cups white sugar
1 cup light brown sugar
1 cup butter, softened
2 tsp. vanilla
2 large eggs
2 tsp. cream of tartar
1/2 cup unsweetened cocoa powder
1 tsp. cinnamon, divided
1 tsp. cayenne pepper
1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. baking soda
2-1/4 cup flour
1 cup semi-sweet chocolate chips
Instructions
In the bowl of a mixer, combine the white sugar, brown sugar and butter. Mix until well combined. Add the vanilla and eggs. Mix until well combined, scraping down the edges if necessary.
In a separate bowl, combine the cream of tartar, cocoa, 1/2 teaspoon cinnamon, cayenne, chili powder, flour, salt, and baking soda. Stir with a whisk until the ingredients are combined.
Add the dry ingredients to the wet ingredients. Mix well. The dough will be stiff.
In a separate bowl, microwave the chocolate chips for 20 seconds. Stir. Continue microwaving in 15-second intervals, stirring after each interval, until the chocolate is smooth. Add the melted chocolate to the dough and mix with the mixer until the chocolate is combined.
In a small bowl, prepare the cinnamon sugar. Combine the sugar, remaining cinnamon, a pinch of cayenne and a pinch of salt. Stir until well combined.
Preheat the oven to 250 degrees. Roll about a teaspoon worth of the dough into balls and roll in the cinnamon sugar. Place on a baking sheet lined with parchment paper.
Bake for 15-20 minutes until the cookies are puffy. Serve warm or cold. The spice is very subtle in these cookies. At first, you will not notice it, but give it a second or two. Delicious and special!
