Let’s celebrate the weekend with a refreshing cocktail. If you have a brut variety, you can replace the Prosecco with champagne. The Limoncello is the star of this show, other than me, the birthday girl. The light and fresh taste of the Limoncello is a perfect complement to the bubbly Prosecco. Besides, bubbles are fun! I can’t think of anything better than bubbles on a birthday.
Ingredients
1 bottle Prosecco, very cold
1 ounce Limoncello (40 ml/1.3 oz.), very cold
1 lemon, zest and juice
Instructions
Before you begin pouring, peel the lemon. I like to use a peeler for this task. You can use a knife if you prefer, being careful not to cut into the bitter pith. I seem to have more luck with a peeler, so that is what I will use on this occasion. Try to cut the strips as long as you can because they will work better for a pretty presentation
Add the limoncello and 1 tablespoon of fresh lemon juice in a pretty glass.
Fill the rest of the way with Prosecco. Garnish with a twisted lemon peel. CHEERS!! Happy Birthday to me!
