I recently saw some large green tomatoes in the produce department in a specialty grocery store. I HAD to pick some up to make some Keto Fried Green Tomatoes. Green tomatoes are seasonal, so I did not want to miss this opportunity. If you grow your own tomatoes, pick some while they are green, so you can enjoy this seasonal snack or appetizer.
Ingredients
3 green tomatoes, sliced
1 cup CarbQuik bake mix or other bake mix
1/2 cup parmesan cheese
2 tsp. garlic powder
Salt and pepper to taste
1 tsp. onion powder
1/2 tsp. cayenne
3 eggs, slightly beaten
2 Tbsp. heavy cream
Oil for frying
Instructions
In a shallow plate or pie pan, place the CarbQuik baking mix. In another shallow plate or pie pan, place the egg and cream. In another plate or pie pan, place the Parmesan, garlic powder, salt, pepper, onion powder and cayenne and mix well to incorporate the spices.
Heat the oil. It is ready when a little of the CarbQuik sizzles when dropped in the hot oil. I use a large electric skillet for a task like this. You do not need a lot of oil to fry the tomatoes; about an inch in the pan will do.
I like to slice the tomatoes all at once and lay them out on a baking sheet lined with a paper towel to soak up any moisture. Then, I season the tomato slices with salt and pepper.
Dredge the tomatoes first in the CarbQuik, then the egg, and then the Parmesan mixture. I like to do all the breading at once before I start frying. I line them up on a wire rack to make the process easier.
Drop the tomatoes in the hot oil in batches. Fry the tomatoes for about 3 minutes per side. Be careful when turning the tomatoes to the other side to avoid damaging the crust.
When the tomatoes are done, remove to a wire rack situated over some paper towels to drain. Serve hot with a drizzling of remoulade sauce.
