I love playing around with my food dehydrator! I got a great deal on pineapple for .87 at a local grocery store and knew I had to see how well it dehydrated. Let me tell you, it turned out great. One pineapple filled my entire dehydrator that has seven shelves. The next time I find a great deal on pineapple, I am going to buy several to dehydrate because the dehydrated pineapple slices disappeared quickly.

1 large pineapple
Lemon juice
Instructions
Cut the top and bottom off the pineapple. Stand it up on its end. Cut the spiky rind off the outside of the pineapple.
At this point if you have a pineapple coring tool, you can make your life a lot easier by using it to core the pineapple. That is one of the few tools that I do not have, so I have to do it the hard way. From the top of the peeled pineapple, cut it downward in half through the middle. Lay each half on its side and cut the half in half again, Repeat with the other half. Now you have four pieces.
Stand one of the quarters on its end and slice the core from the center of that piece. Repeat with the remaining quarters.
Slice each quarter thinly and dip the slices in lemon juice to keep them from turning brown.
Arrange the slices on the dehydrating racks. Repeat with the remaining quarters.
Set the dehydrator to 135 degrees for 8 -12 hours. The pineapple is done when they snap in the middle. Add more time if needed.
Pack the dehydrated pineapple in glass mason jars. Vacuum seal the jars for long term storage if you are not going to eat it immediately. It doesn’t last very long at my house.
The lemon juice should have been obvious to me, but it wasn’t. Thank you for that reminder! This is going in my to-do list!
