In my life before I lived a Keto lifestyle, I used to make these Pizza Bombs with canned biscuits. I still make them now, but I roll out a batch of Keto fathead dough and use a biscuit cutter to make the circles. It’s a little more effort to use the fathead dough, but not that much. It depends on what you are willing to do to make something fun. Either way, these Keto Pizza Bombs are the BOMB!
Ingredients
1 jar or can pizza sauce
1 9 oz. bag mozzarella cheese
Instructions
Roll out the fathead dough into biscuit thickness. Using a biscuit cutter, cut out the fathead circles.
Flatten the fathead circles to enlarge them.
Top with a spoonful of pizza sauce in the center of the dough round and sprinkle with some Italian seasoning or pizza seasoning.
Place 3-4 pepperoni slices on top of the sauce.
Top with a spoonful of mozzarella cheese.
Fold two edges of the dough up and over the filling and press to seal together. Repeat with the remaining two sides to meet in the middle. Press the edges together carefully and slightly tuck them under,
Place the bombs with the seam side down on a greased baking sheet and brush with melted butter.
Bake 12-15 minutes until the bombs are golden brown on top. Some of the sauce may seep out of the dough as it bakes.
Serve with some extra pizza sauce for dipping.
