I used to make Corn Dog Muffins a long time ago when my son and his friends were little. They were always a big hit! As they all grew up, a batch of these were gone in what seemed like seconds. Back then, I used to make the cornbread muffins from scratch, but I wanted to try making them now with the low-carb Miss Jones cornbread mix. The cornbread mix is yummy on its own, so I am experimenting with add-ins.
You have to really want some cornbread to buy this mix because it is expensive. Even when it is on sale at the store it is expensive. In any event, these Keto Corn Dog Muffins taste great. I think I will savor them, though.
Ingredients
1 bag Miss Jones Keto Cornbread Mix
Ingredients for the cornbread mix
1 package hot dogs, cut in thirds
Instructions
In a mixing bowl, prepare the cornbread mix according to the package directions.
In a greased muffin tin, fill the muffin cups about 2/3 full. Set aside. Cut the hot dogs into thirds.
Place one hot dog segment on top of the cornbread mix in each of the muffin tins. Press down on the hot dog using a small spoon to submerge the hot dog segment.
Bake in the oven according to the package directions. Voila! Keto Corn Dog Muffins!

- 1 Mixing bowl
- 1 6 cup muffin tin
