Meal Prep for the Week of November 6, 2023

Did you ever have one of those weeks when nothing seems to go your way? That was last week for me. When things get out of control and the unexpected happens, I am glad I have meals that are prepped and will come together easily. Not only that, even though the components are ready, sometimes you have to go off the plan to make it even easier. That was also last week for me. I try not to make things worse by guilting myself about eating out and off diet when things go awry. I’m going to look at it more as comfort food; kind of like a mental health day.

The Menu

Monday – Freezer Meal: Asian Chicken, Starch- Resistant Rice, Green Beans, Broccoli

Tuesday Keto Steak Fingers, Fried Eggplant

Wednesday – Mushroom Swiss Patty Melts, Zesty Pesto Pasta Salad (starch-resistant version), Leftover Fried Eggplant

Thursday – Popeyes Fried Chicken because my tire blew out while running errands. It was a Popeye’s kind of day.

Friday – Leftovers

Saturday – Chicken Gnocchi, Lemony Green Beans

Sunday Cajun Shrimp Boil Small Batch

Breakfast – Overnight Green Chile Breakfast Enchiladas, Sausage and Eggs

Lunch – Leftovers, Creamy Tomato Basil Soup and Grilled Cheese

Snacks – Catalina Crunch Snack Mix, Blistered Shishito Peppers and Dip, Decadent Keto Peanut Butter Pie

Thawing

Freezer Meal: Asian Chicken

Shredded Chicken – Chicken Gnocchi

Shrimp – Cajun Shrimp Boil

Ground turkey sausage – Overnight Breakfast Enchiladas

Cubed Steak – Steak Fingers

Smoked Sausage – Cajun Shrimp Boil
