I had some blistered shishito peppers as an appetizer at a restaurant in Hot Springs, Arkansas, last year. One bite, and I was hooked. I liked them so much that I decided to make a version of my own when I got home. The only problem with this recipe is that Shishito Peppers may be a little hard to find. I get them at a specialty grocery store in central Houston called Central Market. I will stop by and pick them up whenever I am in the area. Shishito Peppers are a little expensive, so having these as an appetizer occasionally is definitely a treat. They are so simple to make.
Ingredients
Shishito peppers, leave whole
Olive oil
1 cup sour cream
1/2 cup salsa
Salt and pepper to taste
Instructions
Heat the oven to 400 degrees In a bowl, toss the peppers with a good amount of olive oil, salt and pepper.
Turn out onto a baking sheet and spread into one layer. Bake in the oven for 20 minutes or until the top parts of the peppers look blistered. The peppers are not spicy like a jalapeno; they are actually very mild.
In the meantime, prepare the salsa and sour cream sauce. In a medium bowl, mix the salsa and sour cream. Stir well.
Serve peppers with the sour cream sauce. You can also serve these peppers without the sour cream sauce. They are just as good without the sauce.
