I love this shrimp recipe! I use Carbquik to dust the shrimp and add some Swerve to unsweetened coconut for the outer coating. The air fryer cooks the shrimp perfectly, and they come out crispy on the outside and juicy on the inside. Serve these as an appetizer with a dipping sauce or serve them with rice for a complete meal.
Ingredients
2 lbs. jumbo shrimp, peeled and deveined
Milk for soaking fish
1/4 cup unsweetened coconut
3/4 cup Carbquick or other low-carb baking mix or coconut flour
1 Tbsp. seafood seasoning
1 Tbsp. Creole seasoning
1 tsp. salt
1/2 tsp. garlic powder
2 tsp. powdered Swerve
2 – 3 eggs
For the Dipping Sauce
1/2 cup mayonnaise
2 Tbsp. Sriracha
2 tsp. lime juice
1 tsp. Worcestershire sauce
1 Tbsp. granular Swerve
Instructions
Thaw and peel the shrimp. Place shrimp in a casserole dish or medium bowl. Cover with milk and allow to soak for at least 30 minutes. Soaking seafood in milk removes any fishy odor or taste.
In a pie plate or shallow dish, add some Carbquik or other low-carb baking mix. You can use coconut flour; however, it tends to dry out the shrimp because it soaks up all the moisture. Add a sprinkle of Creole seasoning and seafood seasoning to the flour.
In another pie plate or shallow dish, beat the eggs slightly.
In a third pie plate or shallow dish, combine the coconut, salt, garlic powder and powdered Swerve. Alternatively, you could use powdered monk fruit sweetener instead of the powdered Swerve, which gives the same results.
Now that all the components are ready, drain the milk from the shrimp and rinse them well. Pat dry with a paper towel. Season the shrimp with the Creole seasoning and seafood seasoning.
Dredge the shrimp in the Carbquik to cover lightly. Then, dip in the egg. Finally, dip in the coconut mixture. Place the shrimp in the air fryer basket or tray. Spray lightly with cooking spray.
Set the air fryer at 450 degrees and cook the shrimp for 3 minutes until golden. Make sure you spray the basket or try first so that the shrimp does not stick. Flip the shrimp over and cook for another 3 minutes. Work in batches until all the shrimp are done.
In a bowl, combine the ingredients for the dipping sauce. Place in the refrigerator to chill until ready to use.
Serve the shrimp with the dipping sauce. These are good as an appetizer or a meal.
