We are on vacation this week, so we are taking a 10-day break from our Keto diet. We are in the vacation habit of renting a two-bedroom apartment with a full kitchen. I am a planner for vacation, so I plan any meals around our activities schedule. If we will not be home around lunch or dinner time, we will eat at a restaurant; however, if we plan to be in the resort apartment around those times, we will either use the instant pot or prepare a meal in the apartment kitchen. This year, we had to work around reservations at certain venues due to Covid-19 restrictions, so some activities were set in stone, but there were other activities that did not require reservations. We could exercise some flexibility with those activities, depending on the weather. Flexibility is key! It sounds a little weird, but we can save a lot of money by eating some meals in the apartment. We don’t mind it.
We do a meal plan for the week, so we know what to order from the Wal-Mart pick-up service or another grocery store. Each of us chooses a favorite meal within reason. We try to keep it on the simple side. If we are driving, we purchase many of the snacks before we leave. I have a wicker picnic basket that I stock for the road trip portion of our trip. The remainder of the snack items is stored in a bin that we bring with us. I restock the picnic basket throughout the week for us to snack on. I usually do not return with leftovers.
This week there wasn’t much meal prepping to do. Here is our menu for vacation week.
