Stuffed Pepper Soup

Peter Piper Picked a Peck of Pickled Peppers…..Wait a minute! How many peppers make a peck? I have no idea, but I DO know it only takes three peppers to make this Stuffed Pepper Soup!

Ingredients

1 green bell pepper, chopped

1 yellow bell pepper, chopped

1 orange or red bell pepper, chopped

1 large onion, chopped

2 Tbsp. extra virgin olive oil

2 tsp, garlic, minced

2 pounds ground beef

Salt and pepper to taste ( you will use quite a bit of salt; I used about 2 tablespoons)

1 large can tomato juice

1 can diced tomatoes

1 can fire-roasted diced tomatoes

2 8-ounce cans tomato sauce

2 Tbsp. beef bouillon (Better Than Bouillon recommended)

1 bag frozen cauliflower rice

Instructions

In a large Dutch oven, sauté the chopped bell peppers and onions in the olive oil until translucent. Add the garlic and stir. Add some salt and pepper to season the vegetables.

Add the ground beef and cook until it is no longer pink. Drain. Add the beef and vegetables back to the pot.

Add a little more salt and pepper and stir to combine. Pour in the diced tomatoes, fire-roasted tomatoes, spices and beef bouillon. Stir well.

Pour in the tomato juice and tomato sauce and stir until incorporated. Bring to a bubble. Taste to adjust seasonings.

Add the cauliflower rice or cooked rice. Taste again for seasoning when heated through. Add more salt and pepper as desired. You can certainly use regular rice in the soup. Another way you could serve it is to heat the cauliflower rice and regular rice in the microwave to serve on the side, so everyone can choose one or the other to suit their preferences. On this day, I added a bag of cauliflower rice to the soup. An added benefit of using cauliflower rice for this dish is that the cauliflower rice will not absorb the liquid in the soup. If you have leftovers, the consistency will be the same; whereas regular rice will absorb the liquid, so you would have to add liquid to the leftovers. Either way, this soup is a hearty meal and one to make over and over again on cold nights. I served mine with a couple of slices of Keto toasted loaf bread.
