Roasted green beans in the oven bring out a nutty flavor in them that no one knew existed. Roasted green beans are swell on their own, but sometimes it’s nice to go rogue and give the same old same old a new twist with a few simple ingredients. These green beans complement just about any main entree!
Ingredients
1 lb. fresh green beans, trimmed
1/2 cup Extra virgin olive oil
salt and pepper to taste
2 Tbsp. garlic, minced
1 cup Colby Jack cheese, shredded
2 Tbsp. shredded Parmesan cheese
Instructions
Preheat the oven to 425 degrees. In an 8×8 baking dish sprayed with cooking spray, place the green beans in a single layer. In a small bowl, mix the olive oil and garlic together. If you feel you want to use more garlic than 2 Tbsp., I am not against that. The more the merrier!
Pour the olive oil mixture over the green beans and sprinkle with salt and pepper. Toss to coat.
Sprinkle the Colby Jack cheese over the green beans; then, sprinkle the shredded Parmesan on top of that. Bake in the oven for 20 minutes. Serve and enjoy the cheesy goodness!
