A mix of asparagus and tomatoes makes an amazing and colorful side dish! It comes together in minutes and should be prepared just before serving for added freshness.
Ingredients
3 Tbsp. extra virgin olive oil
2 Tbsp. butter
1 small onion, chopped
1 bunch of asparagus, stems removed
1 cup fresh mushrooms, sliced
1 package grape tomatoes, cut in half
3 tsp. garlic, minced
1 Tbsp. lemon juice
Salt and pepper to taste
Instructions
This vegetable dish comes together quickly, so it is a good idea to have all the parts of it ready before adding it to the pan. Begin preparing as an accompaniment to a main dish just before the main dish is ready to serve. Heat the oil and butter in a skillet pan.
Sauté the onion and garlic until translucent. Meanwhile, cut the asparagus into approximately 2-inch pieces.
Add the mushrooms and sauté until soft.
Add the tomatoes and allow them to blister. Add the asparagus and stir. Add the lemon juice, salt, pepper and stir.
