Chocolate Frosting

My mother turned 88 this year, so for her birthday she wanted a chocolate cake with chocolate icing. When you are 88 years old, you should get whatever you want. I didn’t make her cake completely from scratch this year as I am pressed for time due to many balls i. I did make some additions to a box of cake mix by adding an extra egg, sour cream and milk in place of the liquid components. The result is a fluffy, moist chocolate cake, and it is delicious. What makes this cake, or any cake, really special is homemade frosting. It really is the icing on the cake! (I had to say that!)

Ingredients

1 stick unsalted butter, at room temperature

4 cups powdered sugar

1 bag chocolate chips

1/2 stick butter

1 tsp. vanilla

3-4 Tbsp. heavy cream

Instructions

In the bowl of an electric mixer, combine 1 stick of butter with the powdered sugar and mix for about 5 minutes. Stop the mixer and scrape down the sides. Continue mixing for 1 minute.

In a small bowl, place the chocolate chips and 1/2 stick of butter. Microwave for 15-second intervals, stirring between each interval until smooth.

Add chocolate to the powdered sugar mixture. Add vanilla and heavy cream. Mix until smooth and creamy.

Spread on your favorite baked items.

This recipe could easily be made as a Keto frosting. Hmmmm…. A recipe for another post at another time.
