Tuscan Salad

This healthy salad is easy to throw together with items that you probably have on hand. I especially love this salad paired with any kind of pizza.

Ingredients

Butter lettuce salad mix

(Optional) Canned green beans, drained or canned cannellini beans, drained and rinsed

Green or black olives, sliced or chopped

Red onion, chopped or sliced

Grated or shredded Parmesan

Balsamic vinaigrette dressing, bottled or homemade

Instructions

I like to make a salad a bowl at a time since I am not feeding a huge crowd. We only have two salad eaters in our home at any given time; however, salads are easy to prepare on a larger scale if needed. For this delicious Tuscan Salad, I place a couple of handfuls of butter lettuce in each bowl.

Next, add the green or black olives and some red onion.

You can add some cannellini beans at this point. Cannellini beans are not allowed on a Keto diet, but if you can add them, they add a lot of texture to this salad. You can replace the cannellini beans with green beans instead.

Add some cherry tomatoes. I had some heirloom cherry tomatoes that I picked up that morning at Central Market, which is a high-end grocery store in the Houston area.

Finally, add a couple of tablespoons of Parmesan cheese and dress with your favorite balsamic vinaigrette to complete this lovely salad.
