Homemade Southern Biscuits

I’m sure everyone thinks their homemade biscuit recipe is the best, but MINE is the best!! If you require a comparison, my biscuits are more like those you would get at Popeye’s rather than KFC. I never met a biscuit I didn’t like, though. They are all good! I mean, really, who doesn’t like a biscuit in all its fluffy glory? This recipe is not Keto by any stretch of the imagination Sometimes, you just need a biscuit!

Ingredients

2 cups self-rising flour

1/3 cup buttermilk

1 stick butter, very cold and cubed

Instructions

In a bowl, add the self-rising flour. Add the cubed butter to the flour. The butter must be very cold. Smoosh the butter into the flour by hand. Mixing the butter into the flour by hand creates a fluffier biscuit. I’ve tried making the biscuit dough in a food processor, but it seems dense to me. It could be my imagination, but my gut tells me it is not. I’ve also used a pastry cutter, but I end up using my hands anyway, so I might as well use my hands for the whole job. Once all the butter cubes are incorporated into the flour, you should not be able to feel any significant globs of butter.

Make a well in the middle of the flour. Pour the buttermilk into the well.

With a spoon, go around the bowl and toss the flour mixture into the buttermilk by the spoonful. Mix in this fashion until all the flour is in the buttermilk.

Gently knead the dough with your hands until it comes together. If it seems very sticky, add a spoonful of self-rising flour until it does not seem sticky anymore; then, turn out the dough on a floured surface and knead until it seems smooth.

Roll the dough to about a 1″ thickness. Cut into round shapes. The amount of biscuits you end up with depends on the size object you use to cut the biscuits. The biscuits will not spread very much, but they will puff upwards. I use a smaller size biscuit cutter to cut my biscuits,

Any leftover dough can be rolled into a ball and rolled out similarly to cut more biscuits. You don’t want to waste any of this dough, believe me!

Place the biscuits in a greased pan and brush the tops with melted butter.

Bake at 400 degrees for 12-15 minutes or until the tops brown slightly.

Serve with butter, jam, or honey, or just eat them plain. You can make sandwiches with these, top them with Chicken a la King, or smother them in gravy. There are so many ways to eat these wonderful biscuits! One thing is for sure: There won’t be any left after you make these. I guess you better go buy a big bag of self-rising flour so you can make more.
