Creamed Corn

Let me just say that corn is not an allowed food on a Keto diet, but when fresh corn is in season, I have to make my creamed corn. My maternal grandmother taught me how to make corn like this, so I let myself have it every once in awhile.

Ingredients

2-3 cups fresh corn off the cob

2 Tbsp. butter + more if needed

1/2 onion, chopped fine

1 cup heavy cream

Salt and pepper to taste

Instructions

Cut the corn off the cob. I stand the cob in the middle of a Bundt cake pan and cut the corn off the cob so that the kernels fall into the pan. The pan catches the corn and holds the cob in place, making this not so difficult and messy. In a skillet, sauté the onion in the butter until soft.

If you need to add more butter you can do that now. Add the corn and fry until the corn is hot.

Add salt and pepper to taste. Pour in the cream and stir until thick.

Taste to adjust seasonings. This is a delicious side dish! Corn is not Keto-friendly, and I have not yet found a proper substitute for corn in other recipes. This recipe can only be made with corn! HAHA! I like to make it on a cheat day sometimes or for holiday celebrations. It is a wonderful accompaniment to brisket.

Mmmm….Creamed Corn is so delicious with beef, pork or fish. I could eat this for lunch all by itself!
