The things that go through my mind sometimes as alternatives for foods I took for granted before Keto! Cauliflower patties are one idea that I had to replace English muffins. OK…..so they didn’t turn out anything like English muffins, but they are good nonetheless. These could replace polenta as a side dish or as a foundation in recipes that use polenta. I think this experiment was a good one even though it did not turn out as originally intended.
Cauliflower Patties can be wrapped and placed in the freezer for quite some time. I think these are going to be a versatile item to use for breakfast, lunch or dinner.
Ingredients
1 head cauliflower, riced (you need about 3 cups of riced cauliflower)
3 eggs
1/2 cup grated Parmesan
4 Tbsp. almond flour
2 Tbsp. coconut flour
1 tsp. baking powder
1 tsp. Italian seasoning
Salt to taste (I used about 1 tsp)
A healthy pinch of black pepper
Instructions
Preheat oven to 400 degrees. Cut the cauliflower into florets. Using a food processor, process the florets until it resembles rice grains.
Place riced cauliflower in a bowl with the remaining ingredients. Mix well until paste forms. If the mixture seems too liquidy, add some more almond flour (do not add any more coconut flour because your cauliflower patties will taste like coconut).
Form your patties. Your patties can be free-formed; however, if you have a hamburger patty maker, you can use that. Mash your patties in the patty maker to the 1/4 pound mark or freeform your patties to about 1/2 inch thickness. Place your patties on a baking sheet lined with parchment paper or a silicone mat. Slightly press your patties with a spatula just enough to make sure your patties will hold their shape.
Place the baking sheet in the oven, and bake for 22-25 minutes or until cauliflower patties are browned slightly on top. Serve Cauliflower Patties for breakfast by placing eggs and sausage on top. Make mini pizzas for lunch using the cauliflower patties as the crust. You can also use cauliflower patties as a side dish for dinner or serve with savory meat and sauce on top as you would polenta. If not serving immediately, wrap the cauliflower patties individually in plastic wrap or Press ‘n Seal wrap and place in a freezer storage bag to keep in the freezer until ready to use. Make a whole bunch to keep on hand when you are in a pinch.
