Although this recipe seems to have a lot of ingredients, it comes together quickly. The peanut sauce in this recipe is so good that I could eat it with a spoon .
Note: The chicken needs some time to marinate, so make sure you prepare the marinade a day ahead. I find that the flavor of the marinade permeates meats better if it marinates overnight.
Ingredients
3 chicken breasts, cut into chunks
For the Marinade:
1 1/2 Tbsp. ginger paste
2 tsp. lemongrass paste
1/2 tsp. turmeric
3 tsp. garlic, minced
3 shallots, chopped fine
4 tsp. granulated monk fruit sweetener (you can use regular sugar but reduce the amount to 2 tsp.)
1/2 tsp. coriander leaf
1/2 tsp. cumin
For the Peanut Sauce:
1 cup of peanut butter (if you are Keto, use sugar-free peanut butter; otherwise, use regular peanut butter)
4 tsp. granulated monk fruit sweetener (again, use regular sugar if you are not Keto, but use 2 tsp. instead)
1 Tbsp. soy sauce
1 can coconut milk
1/2 cup water
Juice of 1 large lime
For the Saute Spice Mix:
1 habanero chili pepper (use a jalapeno if habaneros are unavailable)
2 tsp. ginger paste
2 tsp. lemongrass paste
3 garlic cloves, minced
3 shallots
1/2 tsp. turmeric
1/2 cup green onion, for garnish
Instructions
In a small bowl, combine the ingredients for the marinade and mix well. Before cutting your chicken breast into chunks, poke holes in the chicken breasts with a fork or knife so that the marinade will seep into the meat. I have a special marinating tool that I use for just such an occasion that looks like this:
If I were stranded on a desert island, I would want this gadget with me. After poking holes in the meat, cut the chicken into chunks.
In a resealable bag, combine the chicken and the marinade, making sure to squish the marinade until the chicken chunks are well coated. Place in the refrigerator for 24 hours. The next day, prepare your peanut sauce. In a food processor, combine all the ingredients for the peanut sauce. Pulse until smooth and creamy. Remove the sauce to a bowl and place in the refrigerator until ready to use.
Next, prepare the spice paste. In a small bowl, combine the ingredients for the Saute Spice mixture. Whisk or stir until well combined. Set aside.
Now, you are ready to cook! In a deep skillet pan, saute the Saute Spice mixture in some olive oil for about 3 minutes. Add the chicken. When the chicken seems cooked through, pour in the peanut sauce. You can use your discretion about how much sauce to add. If you like it on the saucy side, use all the peanut sauce. If you want to keep the sauce to a minimum, spoon in the sauce until you reach the consistency of your preference. Bring to a boil. Turn down the heat to medium. Let simmer for 5 minutes.
Your Peanut Chicken is ready to eat! Serve over rice or cauliflower rice. Garnish with green onions. Delicious!
