One of my favorite Keto products is the Keto brand granola. This granola comes in a variety of flavors, including blueberry cinnamon, cinnamon pecan, pumpkin spice, cacao, vanilla strawberry, sweet cinnamon, birthday cake and chocolate cupcake. I use the birthday cake flavor in this recipe because it tastes delicious with berries. You can find the Keto granola at Sprouts, Costco and Sams; however, I am sure other stores may carry it, depending on your region. Costco usually only carries blueberry cinnamon in a large bag; it is a good value. Sam’s alternates the flavors, but they will clearance it out sometimes for around $3:00 a bag and that is the same size large bag as Costco. That’s a steal of a deal! Sprouts carries a variety of flavors in a smaller bag, but it is not as good a value for the price. Of course, you can also purchase through Amazon; they have all the flavors in a variety of sizes.
Ingredients
1 cup Keto granola, divided
1/2 cup fresh raspberries
1/2 cup strawberries, sliced
1/2 cup plain Greek yogurt
1 tsp. vanilla extract
2 tsp. monk fruit sweetener, divided
Instructions
In a bowl, combine the sliced strawberries and 1 tsp. monk fruit sweetener. Set aside.
In another small bowl, combine the Greek yogurt, vanilla extract and the remaining teaspoon of monk fruit sweetener. Stir well and taste to adjust the sweetener. Set aside.
Place 1/2 cup of Keto granola in two bowls. I used the Birthday Cake flavor. It is so good!
Spoon some strawberries and raspberries over the top.
Top each bowl with half of the yogurt mixture. Make sure you drizzle with the juice that the strawberries made while macerating. You could also add a sprinkle of cinnamon on top of the yogurt for a little hit of flavor. This is one of my favorite breakfast treats!
