These grilled kebobs are served with low-carb pita bread and drizzled with a yummy yogurt sauce for Mediterranean fare. Plan ahead a little so you can marinate the meat overnight for an amazing infusion of flavor. Once the kebobs are marinated, this meal is literally done within 10 minutes. In my book, this is one of the best weeknight meals I can make! Quick and delicious – That’s the ticket!
Ingredients
1 container prepared Tzatziki sauce or homemade
1/2 cup fresh mint, chopped
1/2 cup yogurt
4 cloves garlic, minced
2 tsp. coriander
1 Tbsp. extra virgin olive oil
1 tsp. paprika
1 tsp. lemon zest
1/8 tsp. cinnamon
1 tsp. dried mint
1 tsp. salt
1/2 tsp. cumin
1/2 tsp. garam masala
1/4 tsp. cayenne pepper
1 lb. beef sirloin, cubed
6 Tbsp. fresh Italian parsley, chopped for garnish
1 large onion, cut in chunks
1 container grape tomatoes, halved
Instructions
Combine the tzatziki sauce and mint. Stir and set aside.
Combine the yogurt, garlic, coriander, olive oil, paprika, lemon zest, cinnamon, salt, dried mint, cumin, garam masala and cayenne.
Add sirloin cubes to a resealable bag. Pour the yogurt marinade over the meat and massage to coat. Place in the refrigerator to marinate overnight.
Remove the marinated meat from the refrigerator and grill it, turning occasionally, until the beef reaches the desired temperature. You can skewer the beef cubes if you want to, but I prefer not to have a skewer.
Remove the meat from the grill. In a grill pan on the stove or the grill, heat some olive oil. Add onions and tomatoes. Grill until crisp and tender.
Serve with a sprinkling of chopped parsley. Serve the tzatziki sauce on the side along with some cauliflower rice or regular rice.
