Cajun food does not necessarily mean spicy food, but it does mean that whatever it is will be full of flavor. This Cajun Chicken Pasta recipe is not spicy, but the bold flavoring definitely stands out. Cajun Chicken Pasta will become a favorite at your dinner table.
Ingredients
1 package low carb linguine or spaghetti (I used Dreamfield’s linguine)
2 lbs. chicken tenderloins
1 Tbsp. Cajun seasoning
1-1/4 tsp. salt, divided
1/4 cup butter
1 small red bell pepper, sliced
1 pkg, fresh mushrooms, sliced
2 green onions, sliced
1-1/2 cups half and half
1/4 tsp. lemon pepper
1/4 tsp dried basil
1/4 tsp. garlic powder
Garnish: sliced green onions
Instructions
To make this starch resistant, prepare the pasta according to package directions 24 hours before you plan to serve, making sure the water has plenty of salt. Drain the pasta and place in a container in the refrigerator overnight. If you are not following a Keto diet, you can prepare the pasta as you normally would serve it immediately.
Sprinkle chicken with Cajun seasoning and 1 teaspoon salt.
Melt 1/4 cup butter in a large nonstick skillet over medium-high heat. Add the chicken and saute for 5-6 minutes or until done. Remove the chicken from the pan and keep it warm.
To the same skillet, add bell peppers, mushrooms and green onions and sauté 9-10 minutes or until the vegetables are tender. The liquid should be evaporated.
Return the chicken to the pan and stir in half and half, lemon pepper, garlic powder and salt. Cook, stirring often, over medium-low heat for 3-4 minutes or until thoroughly heated. Add the pasta and toss to coat.
Garnish with chopped green onions and serve immediately.
