Cauliflower with Olives

Cauliflower is a wonder vegetable on a Keto diet. It can be used in so many ways. Roasting cauliflower causes an almost nutty flavor. Pair this Cauliflower with Olives recipe with your favorite Italian entrée or any other protein.

Ingredients

1 head cauliflower, cut in florets

Italian salad dressing

1 lemon, zested and juiced

1 can black olives, drained and sliced

Salt and pepper to taste

1 onion, chopped

1/4 cup fresh flat-leaf parsley, chopped

Instructions

Preheat the oven to 400 degrees. Cut the cauliflower into florets. Place cauliflower on a large baking sheet. Sprinkle with salt and pepper.

Slice the olives and sprinkle over the cauliflower. Add the chopped onion. Drizzle generously with the Italian salad dressing.

Zest the lemon over the cauliflower and squeeze the lemon juice over the cauliflower as well.

Sprinkle generously with salt and pepper. Using your hands, toss the cauliflower and olive mixture until the cauliflower is well coated with the Italian dressing.

Place in the oven for 20 minutes or until the cauliflower is to your desired tenderness. Sprinkle with chopped fresh parsley before serving.
