Topped with mashed cauliflower, this savory Cottage Pie is baked to perfection. This recipe seems to have a lot of ingredients, but it is really very easy to assemble. You could substitute ground lamb in this casserole, but then you would have to change the name to Shepherd’s Pie. Either way, it is delicious!
Ingredients
2-4 Tbsp. extra virgin olive oil
1 onion, chopped
3 tsp. garlic
1 8-oz. container mushrooms, sliced
3 stalks celery, diced
(Optional) 2 carrots, sliced
1 lb. ground beef
1/2 tsp. salt
Pepper to taste
1/2 tsp. garlic powder
1/4 tsp. paprika
2 Tbsp. tomato paste
1 can diced tomatoes
1/4 cup red wine
1 cup beef broth
1 can cut green beans, drained
1 tsp. each parsley, thyme and rosemary
2 Tbsp. cornstarch
1/4 cup water
For the Mashed Cauliflower
1 head cauliflower, steamed and mashed
3 egg yolks
1 cup cheddar cheese
1/4 cup Parmesan
2 Tbsp. heavy cream
1/2 cup mozzarella
1 Tbsp. butter
1/2 tsp. Himalayan pink salt
1/2 tsp. pepper
1/2 tsp. garlic powder
Pinch of parsley
Instructions
Preheat the oven to 400 degrees. In a skillet, sauté the onion, garlic, mushrooms and celery.
Add the ground meat. Cook until the meat is no longer pink. Drain.
Add the salt, pepper, garlic powder, paprika, tomato paste and diced tomatoes. Stir well and heat through.
Add the red wine and beef broth. Stir and heat until bubbles start to form.
Add the green beans, parsley, thyme and rosemary. Stir until combined.
In a small bowl, whisk together the cornstarch and water. Add the cornstarch to the meat mixture to thicken it. Let the meat mixture simmer for 10 minutes.
In the meantime, prepare the mashed cauliflower. In the bowl of a food processor, add the steamed cauliflower, egg yolk, cheddar cheese, Parmesan cheese, heavy cream, mozzarella cheese, butter, Himalayan pink salt, pepper, garlic powder and parsley. Process until smooth.
Pour the meat mixture into a casserole dish.
Top the meat mixture with the mashed cauliflower and spread over the top to the edges.
Top the mashed cauliflower with cheddar cheese. Bake for 25 minutes until bubbly and the cheese has melted.
A simple salad is all that is needed to accompany this meal. Enjoy!
