Classic Cashew Beef

Stir fries are one of my favorite one-pot meals. They come together quickly, so they are fast and fresh. The protein and vegetables are super healthy for a Keto diet served over cauliflower rice. The Asian-flavored sauce on this stir fry is the bomb!!

Ingredients

4 tsp. cornstarch

1-1/2 Tbsp. soy sauce

1 tsp. sesame oil

1 tsp. oyster sauce

1/4 tsp. ground ginger

Dash of cayenne

1/2 cup cold water

1/4 tsp 5 spice powder

Dash black pepper

1 small chuck roast, cubed

2 tsp. garlic, minced

2 tsp, ginger paste or grated fresh ginger

Pinch red pepper flakes

2 cups cashews

1 head broccoli, cut in florets

(Optional) 1 8-oz. bag sugar snap peas

Instructions

In a bowl, combine cornstarch, soy sauce, sesame oil, oyster sauce, ground ginger, cayenne, cold water, 5 spice powder and pepper.

In a wok, stir-fry the beef in oil until brown. Remove and keep warm.

Add the garlic, ginger paste, red pepper flakes and cashews to the wok. Stir fry for one minute. Add oyster sauce and water.

Add broccoli and sugar snap peas. Cover and cook for three minutes.

Add the sauce and stir until thickened. Return the beef to the wok and cook until hot. Server over cauliflower rice or regular rice.

Any stir fry comes together quickly if everything is ready to go. Stir fries come in so many varieties, but this Classic Cashew Beef Stir Fry is always a favorite.

  • 1 measuring cup
  • Measuring spoons
  • 1 knife
  • 1 cutting board
  • 1 Small bowl
  • 1 medium spoon
  • 1 wok, large skillet or large pot
  • 1 Large spoon
