Sweet and Salty Roasted Cashews in Minutes

I have a thing about sweet and salty flavors together. I love these cashews for that reason. The soft texture of cashews pairs well with the buttery sweetness and the additional salt when roasted. Roasting the nuts provides an extra level of flavor to this healthy snack. I love them! You can use regular brown sugar or Swerve brown sugar in this recipe with the same results. The one thing you want to make sure of is to use a flaky or coarse salt to maximize the pop of saltiness. My only problem with these cashews is that I could eat the entire batch myself. My younger self has trouble sharing when these are around.

2 cups lightly salted cashews

2 Tbsp. brown sugar Swerve

1 tsp. flaky or coarse salt

1/2 cup water

Instructions

Heat the oven to 350 degrees. In a skillet, combine the cashews, brown sugar Swerve and water. Stir. Continue stirring until the liquid is evaporated and the cashews are coated.

Transfer to a parchment-lined baking sheet or pan. Sprinkle the flaky salt over the cashews.

Roast in the oven 7-12 minutes. Check them every once in a while to make sure they do not scorch. Enjoy!
