My husband’s birthday is today, so it seems fitting to post my top 10 recipes from last year. I am excited to post all the favorites, starting at #10 and working to the #1 spot.
Number 10 – White Cheddar Scalloped Potatoes – A classic side dish that pairs perfectly with ham, roast, chicken, pork and other protein. The layers of potatoes, the creamy sauce, and the cheesy topping satisfy every taste bud.
Number 9 – Greek Grilled Chicken Salad – The tangy dressing and marinade add a Greek flair to this salad. The components of this salad are easy to prepare ahead for quick assembly. The marinated chicken and crunchy veggies provide an abundance of textures that you will turn to for lunch or dinner. Serve with low-carb pita wedges to complete this meal.
Number 8 – Tilapia Parmesan – Try my twist on Chicken Parmesan, using tilapia. The fish adds a slightly different texture and flavor with the same fabulous sauce. Delicious!
Number 7 – Guilt-Free Ameretto Fat Bombs – Made with cream cheese, almond butter and almond flavoring, these Ameretto Fat Bombs will subdue a craving for something sweet.
Number 6 – Chicken and Black Bean Empanadas with Pineapple Salsa – I cannot claim this recipe as my own. The original author of the recipe is Tyler Florence, who was on the Food Network. I have not changed it over the years because it is perfect. Why mess with perfection?
Number 5 – Red Chicken Spaghetti – Basically, this is chicken spaghetti with a spicy red sauce. It is an amazing recipe for using a whole chicken. It is delicious!
Number 5 – Prime Rib Roast – I’m glad my Prime Rib Roast recipe made it on my top 10 list because I love, love, love this roast. I save it for special occasions because it is a special meal. It’s super delicious!
Number 3 – Brown Butter Green Beans with Pistachios – Brown Butter Green Beans with Pistachios will become the highlight of your meal. The browned butter adds a rich, nutty flavor to the green beans, complementing beef, fish or chicken. The pistachios add some crunch and coordinate to the color of the green beans.
Number 2 – Resistant Starch Twice Baked Potatoes – These tasty potatoes are always a hit! Twice Baked Potatoes are always a big hit for any meal. You can make them low-carb friendly; no one will ever know the difference. The potatoes become starch-resistant overnight by roasting them 24 hours ahead of time.
