Brighten Up Your Table With These Tangy Marinated Tomatoes

Do you always have a bumper crop of tomatoes in your garden? If so, I’ll admit—I’m a little envious! I’d love fresh, homegrown tomatoes for this bright and refreshing summer salad. Unfortunately, I had to make do with store-bought ones, but trust me, it’s still just as delicious! Whether using garden-fresh tomatoes or picking up a few from the store, this salad makes a perfect side dish or a great addition to any potluck. It’s the ideal way to celebrate the flavors of summer!

Ingredients

4 large tomatoes, cut into wedges

1 large red onion, halved and sliced

1/2 cup extra virgin olive oil

1/4 cup red wine vinegar

2 tsp. garlic, minced

2 tsp. dried basil

1 tsp. dried parsley

Salt and pepper to taste

Instructions

Combine the tomatoes and red onion slices in a large container with a lid.

In a small bowl, combine the olive oil, red wine vinegar, garlic, basil, parsley, salt and pepper. Whisk until well combined.

Pour the dressing over the tomatoes and onions. Cover the container with a lid and shake it a few times to coat all the tomatoes and onions.

Place in the refrigerator overnight, shaking the container occasionally to distribute the dressing. Serve as a side dish.
