Do you have a bumper crop of tomatoes in your garden? First of all, if you do, I am quite jealous! I wish I had some for this fresh, summer salad! I had to use what I could get at the store. Either way, this is a refreshing salad you could serve as a side dish or a potluck.
Ingredients
4 large tomatoes, cut into wedges
1 large red onion, halved and sliced
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
2 tsp. garlic, minced
2 tsp. dried basil
1 tsp. dried parsley
Salt and pepper to taste
Instructions
Combine the tomatoes and red onion slices in a large container that has a lid.
In a small bowl, combine the olive oil, red wine vinegar, garlic, basil, parsley, salt and pepper. Whisk until well combined.
Pour the dressing over the tomatoes and onions. Place the lid on the container and give the container a few shakes to coat all the tomatoes and onions.
Place in the refrigerator overnight, occasionally shaking the container every once in a while to distribute the dressing. Serve as a side dish.
