Keto Ground Beef Mini Quiches: A Crowd-Pleasing Recipe

These mini quiches make a filling snack but also do well for breakfast. You can mix and match the protein for variety.

1 recipe Fathead Dough

1/2 lb ground beef

1/4 tsp garlic powder

1/8 tsp. pepper

1 cup Carbquik bake mix

1/4 cup cold butter

2-3 Tbsp. very hot water

1 large egg, beaten

1/2 cup half and half

1 Tbsp. green onion, minced

1 Tbsp. red pepper, minced

1/4 tsp. salt

1/4 tsp. cayenne

1/2 cup cheddar cheese, shredded

Prepare the fathead dough.

You can flatten the dough in one of three different ways:

  1. Roll out the entire dough as flat as possible. Use a biscuit cutter or glass to cut out circular disks as you would if you were making biscuits.

2. Divide the dough into small balls. Roll each ball as thin as possible.

3. If you have a tortilla press, you can use it to flatten the dough balls.

Spray a 12-cup muffin tin with cooking spray. Press the circular disks into each muffin cup. Bake at 350 degrees for 10 minutes until the crusts start to brown.

In a skillet, add the garlic powder, pepper, red pepper and salt. Cook until the red pepper is soft. Add the ground beef. Cook, drain and set aside to cool.

In a bowl, whisk together the eggs, salt and cooled ground beef mixture. Carefully ladle the egg mixture into the crusts using a gravy ladle or spoon. Top with cheddar cheese.

Bake at 350 degrees for 30-35 minutes or until the eggs are set. Use a toothpick or skewer to test for doneness. If it comes out clean, the quiches are done.

  • 1 frying pan
  • 1 medium bowl
  • 1 small ladle or spoon
  • Toothpicks or skewers
