A breakfast casserole can be anything you want it to be. Start with this basic casserole as a base and use whatever you have on hand to make something completely different every single time.
Ingredients
6 – 8 eggs, beaten
1/2 cup half-and-half or heavy cream
1/2 lb. Italian sausage, spicy or mild
1 green onion, chopped
1 red bell pepper, chopped
1 tsp. salt
3/4 tsp. pepper
Instructions
In a large bowl, whisk the eggs until fluffy.
Add the half and half or cream. Italian sausage, green onion, red bell pepper, salt and pepper. Stir until combined. At this point, you can add any other ingredients you want, such as onion, cheese, bacon, etc. The sky is the limit on what you add to personalize the casserole to your own tastes.
Pour the mixture into a greased casserole dish.
Bake at 350 degrees for 30-45 minutes until a toothpick inserted in the center comes out clean and the middle is set.
